Layered Chicken Enchiladas
You will need:
1 Large chicken breast cooked and shredded
1 can of Ortaga Enchilada sauce
1 can of cream soup
2 cups of cheddar cheese
12 nine inch flour tortilla shells
9x9 baking dish
(Onion or other vegetables chopped small if desired)
Cooking spray or something to grease pan
Prepare:
Cook chicken, shred it and set it aside
In a large bowl mix enchilada sauce and soup together
Blend well and set aside
(Chop vegetables if you are using them)
Spray pan with cooking spray
Put a thin layer of sauce on the bottom
Layers:
1. Cut one of the tortillas in ½
2. Dip 1 tortilla and the two ½ pieces in the sauce
3. Set in the pan covering the bottom
4. Add a layer of chicken and a layer of vegetables if you are using them.
5. Cover with sauce
6. Sprinkle with cheese
Repeat layers 1 – 6
Cover the last layer with dipped tortillas
Sauce and cheese
Cover and bake at 350 degrees for 45 minutes
Take out of the oven and let set 5 – 10 minute
Cut and serve
